Ingredients

2 cups shredded cheese (Oaxaca, mozzarella, or Mexican blend)

1 tablespoon butter or oil

Yellow Corn Tortillas

Salsa Verde
Directions
1. Heat a skillet over medium heat and add butter or oil.
2. Place one tortilla in the pan.
3. Sprinkle cheese evenly over the tortilla.
4. Fold tortilla in half.
5. Cook 2–3 minutes until lightly golden.
6. Flip and cook another 2–3 minutes until cheese is melted.
7. Remove and cool slightly.
8. Cut into wedges and serve warm.
